Recipes for lots of different cookies. There are dairy-free cookies, vegan cookies, and gluten-free cookies. Suggestions on how to modify the recipes to be not vegan, dairy-free, and gluten-free are also given. Most of the recipes are one-bowl cookies, meaning that you just add all of the ingredients to a bowl, mix, and then bake! Most of the cookies are also drop cookies, meaning you use a spoon or a cookie scooper to place on a baking sheet. I know baking gluten-free and vegan can seem intimidating, but I promise that it’s just as easy as what you are used to! I make use of existing 1:1 gluten-free all-purpose flours that can be readily purchased at a store. We are so fortunate to live in a time when such a convenient product exists for purchase. So gather all of your supplies, and let’s get baking!
