These No-Bake Peanut Butter Oatmeal Granola Bars are the best! I've made them every week for over a year now, and I'm still not sick of them. :) There's no baking involved, and they are quick to make!

1/2cupcrispy rice cereal
1/8cuppacked light brown sugar
1/3 cupcreamy peanut butter
1/4cupcoconut oil, solid
In an 8x8 glass dish, combine the quick oats, crispy rice cereal, and pretzels. Mix until combined.
In a large sauce pan, add the brown sugar, peanut butter, coconut oil, and honey. Heat over medium heat, stirring occasionally until the mixture starts to bubble. Once it starts bubbling, mix continuously over medium heat for 2 minutes.
Remove sauce pan from heat and add in vanilla. Stir until combined.
Pour the dry ingredients from the 8x8 glass dish into the saucepan. Mix until all the dry ingredients look wet.
Scoop mixture out of sauce pan and into the 8x8 glass dish. Using a piece of aluminum foil, flatten the granola mixture into the 8x8 glass dish.
Chill the granola bars in the refrigerator for at least 30 minutes prior to cutting.
I store the bars in the refrigerator, and they are good for about a week or so. I generally eat one a day, for a total of 8 days and have been fine :)
