Summer colds are the absolute worst :(. And what’s the best cure for any type of cold or flu? Yup, you guessed it! Slow Cooker Chicken Pasta Soup, made in the slow cooker for convenience :). I came across the original recipe by The Recipe Critic, and it is so delicious and simple to make! Instead of spending your time slaving over the kitchen stove making this soup, you can be in bed resting, while your dinner cooks. This soup goes well with homemade dinner rolls. Enjoy, and be well!

Slow Cooker Chicken Pasta Soup

This soup is great for when you are feeling under the weather and are looking for something nutritious to eat.

Ingredients

  • 1.5 pounds boneless chicken breast (can be frozen)
  • 3 medium carrots, peeled and sliced (can substitute with baby carrots)
  • 3 stalks celery, sliced
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 6 cups low sodium chicken broth
  • 1 cup water
  • 2 bay leaves (can omit if you don’t have any)
  • 1 teaspoon Italian seasoning
  • 2 cups Farfalle pasta (or pasta of your choosing)
  • Chopped fresh parsley for serving, if desired
  • Freshly ground Himalayan pink salt and freshly ground black pepper to taste

Instructions

  1. Except for the pasta, add all ingredients to a slow cooker.

  2. Cook on low for 6 hours.

  3. Remove cooked chicken from the slow cooker and shred. Add back to the slow cooker.

  4. Add the pasta, and cook according to the package instructions or until pasta is al dente.

  5. Season with Himalayan pink salt and fresh ground black pepper to taste. Discard bay leaves, and serve immediately with chopped parsley, if desired.

  6. Store leftovers in an airtight container in the refrigerator, or distribute into quart size bags and freeze for later.
