These No-Bake Peanut Butter Oatmeal Granola Bars are the best granola bars I’ve ever had. They are very satisfying, and are a great pre-workout snack. When I first started thinking about making my own granola bars, I was intimidated because I thought they would be complicated and time consuming to make. Boy, was I wrong! I came across this recipe by Two Peas & Their Pod about a year ago, and I have made it so many times that I now have it memorized :). I have made a few tweaks to the recipe so that they are more on the chewier side, and less on the crunchy side. They are also dairy-free! But perhaps the best part about these No-Bake Peanut Butter Oatmeal Granola Bars is that you know EXACTLY what has gone into them. 🙂

These No-Bake Peanut Butter Oatmeal Granola Bars are the best! I’ve made them every week for over a year now, and I’m still not sick of them. 🙂 There’s no baking involved, and they are quick to make!

Ingredients 

  • 2 cups quick oats
  • 1/2 cup crispy rice cereal
  • 3/4 cups chopped pretzels
  • 1/8 cup packed light brown sugar
  • 1/3 cup creamy peanut butter
  • 1/4 cup coconut oil, solid
  • 1/4 cup honey
  • 1 teaspoon vanilla extract

Instructions

  • In an 8×8 glass dish, combine the quick oats, crispy rice cereal, and pretzels. Mix until combined.
  • In a large sauce pan, add the brown sugar, peanut butter, coconut oil, and honey. Heat over medium heat, stirring occasionally until the mixture starts to bubble. Once it starts bubbling, mix continuously over medium heat for 2 minutes.
  • Remove sauce pan from heat and add in vanilla. Stir until combined.
  • Pour the dry ingredients from the 8×8 glass dish into the saucepan. Mix until all the dry ingredients look wet.
  • Scoop mixture out of sauce pan and into the 8×8 glass dish. Using a piece of aluminum foil, flatten the granola mixture into the 8×8 glass dish.
  • Chill the granola bars in the refrigerator for at least 30 minutes prior to cutting.

Notes

I store the bars in the refrigerator, and they are good for about a week or so. I generally eat one a day, for a total of 8 days and have been fine 🙂
