Finally, homemade chocolate chip cookies that are easy to make and dairy-free! I haven’t had chocolate chip cookies in a while, because I was trying to figure out how to economically achieve a dairy-free chocolate chip. There are such chips in existence at the store, but they are prohibitively expensive on the scale that I like to eat cookies on :). After inventing my own homemade chocolate chips, I was able to create this cookie. Now, the chocolate chips don’t hold their shape and the cookies aren’t as pretty, but the end result is still very tasty! 🙂

Chocolate Chip Cookies {DF,SF}

These chocolate chip cookies are healthier than the originals because they are lower in sugar, use homemade chocolate chips, and use extra light olive oil in place of the butter. Serve with a cold glass of milk.

Ingredients

  • 3/4 cup extra light olive oil
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon Kosher salt
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 1/4 cups all-purpose flour
  • 1 cup homemade chocolate chips, or 1 3/4 cups packaged chocolate chips

Instructions

  1. Preheat oven to 375F.

  2. In a large bowl, cream together extra light olive oil, brown sugar, and granulated sugar.

  3. Add baking soda, kosher salt, vanilla extract, and eggs. Mix until incorporated.

  4. Mix in flour.

  5. Mix in chocolate chips.

  6. Drop dough by rounded tablespoonfuls onto ungreased baking sheet.

  7. Bake for 9-11 minutes or until light golden brown on the edges.

Recipe Notes

  • If you are using the homemade chocolate chips, I found it helpful to chill the dough in the refrigerator for 10 minutes before adding the chocolate chips to the dough. I also chilled the dough while baking a batch of cookies. Also, when using the homemade chocolate chips, the cookies are definitely going to spread. So make sure you leave enough room between cookies :).
  • Also, the volume measurement of the homemade chocolate chips is less than the packaged, because they pack in more tightly due to their shape.
  • The amount of calories per cookie is calculated using the homemade chocolate chips. If you are using store-bought chocolate chips such as Nestle Toll House, then the calorie count goes up to 177 calories per cookie.
