It just wouldn’t be Christmas without baking chewy molasses cookies. These particular chewy molasses cookies by Bon Appetit definitely fit the bill :). The cookies have a crispy exterior, and a nice chewy interior. The use of cardamom really sets this molasses cookie apart from the crowd. I’ve also replaced the butter with extra light olive oil and lowered the sugar content to make them healthier. Because let’s be honest here, who only eats one cookie at Christmas?!? But perhaps the most wonderful aspect of these cookies, is that it made my house smell like a gingerbread house :). Nothing gets me more into the Christmas spirit!

  • 1/4 cup + 2 tablespoons extra light olive oil
  • 1/3 cup molasses
  • 1 egg
  • 1/4 cup (packed) light or dark brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon Kosher salt
  • 3/4 teaspoon ground cardamom
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoon ground cinnamon
  • 2 teaspoons baking soda
  • 2 cups all-purpose flour


  1. Preheat oven to 375F.

  2. In a large bowl, cream olive oil, molasses, egg, and both sugars until well blended.

  3. Add the salt, cardamom, ginger, cinnamon, baking soda and mix to combine.

  4. Add the flour to the mixture in two additions, mixing thoroughly after each.

  5. Drop dough by rounded tablespoons onto an ungreased tray.

  6. Bake for 8-10 minutes, or until cookies are puffed, cracked, and just set around the edges.
